JUICY FALL MUFFINS with Evolve Rx

INGREDIENTS (12 MUFFINS):

• 2 1/4 cups flour 
• 4 1/4 tsp pumpkin spice
• 1 1/2 tsp baking powder
• 3/4 tsp baking soda
• 1/4 tsp salt
• 2 large egg whites  (room temperature)
• 1 1/2 tsp vanilla
• 1 cup sugar
• 3/4 cup pumpkin puree
• 1/4 cup plain Greek yogurt
• 3 oz milk of your choice
• 3 oz heavy whipping cream
• 1 1/2 cups freshly grated carrots
• 3/4 cup diced apple
• 1/4 cup raisins
• 1/4 cup dried cherries
• 4 Tbsp crushed pecans
• 2 3/4 Tbsp Evolve RX

INSTRUCTIONS:

• 1. Mix Evolve RX with egg whites, vanilla, and sugar.
• 2. Add the pumpkin puree and the Greek yogurt into the mix.
• 3. Add baking powder and baking soda and mix.
• 4. Add the flour and mix. 5. Add milk and heavy whipping cream and mix.
• 6. Fold in apples, grated carrots, cherries, raisins, and nuts.
• 7. Divide batter into a muffin mold.
• 8. Bake at 350° F for 26-29 minutes.
